Broccoli and Bacon Quiche {Grain-Free}
Ingredients:
7 eggs (preferably pastured or organic)
1 pint organic cream (not ultrapasteurized)
1 cup organic mild cheddar cheese, grated
½ cup organic sharp cheddar cheese, grated
½ cup organic jack cheese, grated
¼ cup organic parmesan cheese, grated
6 ounces organic or pastured bacon, cooked until crispy
1½ cups broccoli florets, lightly steamed or sautéed*
½ teaspoon dried thyme
½ teaspoon sea salt
*Notes: If you can find raw or grass-fed cream and cheese, use those for added health benefits. Leftover roasted broccoli also works wonderfully in this quiche.
Preparation Steps:
Preheat Oven:
Preheat your oven to 325°F (163°C). Grease a pie dish and set aside.
Cook the Bacon:
Cook the bacon in a skillet over medium heat until crispy, which takes about 20 minutes. Once done, set aside on a paper towel-lined plate to drain excess fat.
Prepare the Broccoli:
While the bacon is cooking, steam the broccoli for about 5 minutes until just tender. Alternatively, you can do a quick sauté in the leftover bacon grease for added flavor. Set aside.
Grate the Cheese:
Grate all the cheeses and set aside.
Mix Eggs and Cream:
In a large mixing bowl, beat the eggs and cream together until fully mixed. Add the dried thyme, sea salt, and grated cheeses. Stir to combine.
Assemble the Quiche:
Crumble the cooked bacon and evenly distribute it in the greased pie dish. Add the steamed or sautéed broccoli, spreading it out evenly. Pour the egg and cheese mixture over the bacon and broccoli.
Bake:
Place the pie dish in the preheated oven and bake for 30-40 minutes, until the quiche is golden brown around the edges and light golden brown on top. A knife inserted into the center should come out clean.
Cool and Serve:
Allow the quiche to cool for at least 15 minutes to set. Serve immediately or refrigerate for later.
