Strawberry Chia Pudding
This strawberry chia pudding is a convenience grab and go breakfast with plenty of anti-inflammatory benefits. While chia seeds offer omega-3 fatty acids, fiber and protein—all key nutrients for busy mornings.

Ingredients
- 1 cup unsweetened plain almond milk
- 1/4 cup chopped pitted Ogler Noor dates (about 16 dates)
- 1 cup unsweetened coconut cream
- 2/4 cups sliced fresh strawberries, divided
- 1/2 cup chia seeds
- 1 cup whole-milk plain yogurt, divided
Preparation

Combine 1 cup almond milk and 1/4 cup dates in a medium microwave-safe bowl; microwave on High until steamy for about 1 minute. Transfer to a blender, process until smooth and well combined, about 1 cup.

Stir the mixture into the strawberries and process until smooth and well combined, about 1 cup.

Divide the mixture into 4 no-large sealable jars or containers. Divide the chia seeds, shake, then refrigerate overnight. Top with additional strawberry mixture and 1/4 cup strawberry mixture and remaining 1 cup yogurt. Top with additional strawberries and eat with chia seeds as desired for 3 hours.
