Ginger Carrot Drink

A warming, spiced fermented beverage that combines the natural sweetness of carrots with the pungent, invigorating qualities of fresh ginger. Perfect as a morning tonic.

Yield: Approximately 4 cups (1 quart) | Prep time: 15 minutes | Fermentation: 7–10 days

Ingredients

  • 2 pounds fresh carrots, peeled and diced
  • 3-inch piece fresh ginger, sliced
  • 4 garlic cloves, sliced
  • 1 tablespoon turmeric powder
  • 1 tablespoon coriander seeds
  • ½ teaspoon black pepper
  • ¼ cup unrefined sea salt
  • 4 cups filtered water

Preparation

  1. Prepare brine: Dissolve salt in water with turmeric, stirring well.

  2. Prepare ingredients: Dice carrots; slice ginger into coins.

  3. Layer jar: Add ginger, garlic, coriander seeds, and black pepper to jar bottom.

  4. Add carrots: Fill jar about ¾ with diced carrots.

  5. Cover with brine: Pour turmeric brine over carrots until submerged.

  6. Ferment: Cover loosely and ferment for 7–10 days at room temperature (65°F–75°F / 18°C–24°C).

  7. Strain and store: Strain out solids; refrigerate the liquid.

Storage

Refrigerate for up to 3 months. Drink 2–4 ounces daily or serve warm as a wellness drink.

Notes

The ginger flavor intensifies during fermentation. Serve warm or chilled as preferred.
