One-Skillet Mozzarella Chicken Thighs
Juicy, flavorful chicken thighs topped with melted mozzarella and surrounded by fresh vegetables, all cooked in one skillet. An easy, satisfying weeknight dinner.

Ingredients
- 2 T. extra virgin olive oil
- 6 boneless, skin-on chicken thighs
- Sea salt and black pepper, to taste
- 1 medium onion, sliced
- 2 bell peppers, sliced
- 2 c. fresh mushrooms, sliced
- 4 cloves garlic, minced
- 1 t. Italian seasoning
- ½ c. low-sodium chicken broth
- 1 c. fresh mozzarella, sliced
- 2 T. fresh basil, chopped
Preparation

Sear chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper. Sear skin-side down for 5 minutes, then flip and cook another 3-4 minutes. Remove and set aside.

Cook vegetables: In the same skillet, add onion, bell peppers, mushrooms, and garlic. Sauté for 5-7 minutes until softened. Stir in Italian seasoning.

Combine: Return chicken to skillet. Add chicken broth and bring to a simmer.

Bake: Transfer to a preheated 375°F oven and bake for 15-20 minutes until chicken is cooked through.

Add cheese: Top each chicken thigh with fresh mozzarella and return to oven for 2-3 minutes until melted.

Finish: Remove from oven, garnish with fresh basil, and serve immediately.
