One Pan Broccoli Cashew Chicken

One Pan Broccoli Cashew Chicken whips up in 15 minutes and it’s so easy to make. This delicious, 10 ingredient, full of vibrant flavors is only on the table, too!
Ingredients
- 2 cups boneless, skinless chicken breast, cubed (preferably pasture-raised or organic)
- 2 cups broccoli florets
- 4 cups homemade broth, organic store-bought bone broth
- 1/2 cup coconut aminos
- 1 cup roasted cashews
- 1 piece ginger, grated or finely minced
- 1 teaspoon sesame oil
- 2 tablespoons honey
Preparation

In a medium or large pot over medium-high heat, add the garlic and ginger, stirring occasionally for 1 minute.

Add the chicken and salt, stirring occasionally for 3-4 minutes until there is no more pink in the chicken. Add the cashews and broccoli, occasionally for 1 minute.

Add the broth, coconut aminos and cinnamon, and honey, stirring occasionally for 1 minute. Add the lemon and season with salt and pepper. Stir with remaining juice. Push the thickened sauce has slightly thickened. The broccoli is crisper and chicken is cooked through.

Remove from heat and allow to rest for a couple of minutes then serve immediately.
Notes
Chicken Tip: Cut the chicken up into cubes with kitchen scissors, but you can easily do the same by just chopping it up on a cutting board.
