Healthy Chicken Broccoli Casserole

A creamy, protein-rich casserole that’s a healthier take on a classic comfort food. Perfect for weeknight dinners or meal prep.

Prep time: 20 minutes | Cook time: 30-35 minutes | Serves: 6

Ingredients

  • 2 T. extra virgin olive oil
  • 2 lbs. chicken breast, cubed
  • Sea salt and black pepper, to taste
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 c. fresh broccoli florets
  • 1 c. Greek yogurt
  • ½ c. low-sodium chicken broth
  • ½ c. sharp cheddar cheese, shredded
  • ¼ c. Parmesan cheese, grated
  • 1 t. Dijon mustard
  • ½ t. paprika

Preparation

  1. Cook chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook until golden, approximately 6-8 minutes. Remove and set aside.

  2. Sauté aromatics: In the same skillet, add onion and garlic. Cook until softened, approximately 3-4 minutes.

  3. Add broccoli: Add broccoli florets and cook for 4-5 minutes until starting to soften.

  4. Make sauce: In a small bowl, whisk together Greek yogurt, chicken broth, cheddar, Parmesan, mustard, and paprika.

  5. Combine: Return chicken to skillet, pour sauce over everything, and mix until coated.

  6. Transfer & bake: Pour mixture into a baking dish. Bake at 375°F for 20-25 minutes until bubbly.

  7. Rest & serve: Let sit for 5 minutes before serving.
