One Pan Citrus Beets Roasted Chicken Recipe

One Pan Citrus Beets Roasted Chicken

A beautifully colorful, complete meal featuring tender roasted chicken, sweet roasted beets, and a bright citrus glaze, all cooked on one pan.

Prep time: 20 minutes | Cook time: 40-45 minutes | Serves: 4

Ingredients

  • 1 whole chicken (3-4 lbs.), cut into pieces, or 6-8 chicken pieces
  • 1 lb. fresh beets, peeled and cut into wedges
  • 3 T. extra virgin olive oil
  • Zest and juice of 2 oranges
  • 2 T. balsamic vinegar
  • 2 T. raw honey
  • 4 cloves garlic, minced
  • 1 t. fresh thyme
  • 1 t. fresh rosemary
  • Sea salt and black pepper, to taste

Preparation

  1. Prepare pan: Arrange chicken pieces and beet wedges on a large roasting pan.

  2. Make glaze: In a small bowl, whisk together orange zest, orange juice, balsamic vinegar, honey, garlic, thyme, rosemary, 2 tablespoons olive oil, salt, and pepper.

  3. Season: Brush chicken and beets with remaining olive oil. Season with additional salt and pepper.

  4. Roast: Pour glaze over chicken and beets. Roast at 400°F for 40-45 minutes, stirring vegetables halfway through and basting chicken with pan juices.

  5. Check doneness: Chicken should reach an internal temperature of 165°F.

  6. Rest & serve: Let rest for 5 minutes before serving with pan juices.
