Healthy Spinach Artichoke Chicken Casserole

A creamy, comforting casserole that combines the flavors of spinach and artichoke dip with tender chicken. A nutritious one-dish meal that’s sure to please.

Prep time: 20 minutes | Cook time: 30-35 minutes | Serves: 6

Ingredients

  • 2 T. extra virgin olive oil
  • 2 lbs. chicken breast, cubed
  • Sea salt and black pepper, to taste
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 10 oz. frozen spinach, thawed and drained
  • 14 oz. canned artichoke hearts, drained and chopped
  • 1 c. Greek yogurt
  • ½ c. heavy cream
  • ½ c. Parmesan cheese, grated
  • 1 c. mozzarella cheese, shredded
  • 1 t. Italian seasoning
  • ¼ t. nutmeg

Preparation

  1. Cook chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook until golden, approximately 6-8 minutes. Remove and set aside.

  2. Sauté aromatics: In the same skillet, add onion and garlic. Cook until softened, approximately 3-4 minutes.

  3. Add vegetables: Stir in spinach and artichoke hearts. Cook for 2 minutes.

  4. Make sauce: Remove from heat. Stir in Greek yogurt, heavy cream, Parmesan, half the mozzarella, Italian seasoning, and nutmeg.

  5. Combine: Return chicken to skillet and mix until coated.

  6. Transfer & top: Pour mixture into a baking dish. Top with remaining mozzarella.

  7. Bake: Bake at 375°F for 20-25 minutes until bubbly and golden.

  8. Rest & serve: Let sit for 5 minutes before serving.
