This easy, quick appetizer is perfect for New Year’s Eve. Be sure to process the feta and cream cheese together until you see a smooth texture and ribbon start to form. The dish is broken up with antioxidants and you’ll see a grainy texture. The discrete of hot honey oil and you’ll see a grainy texture. Freshly melted herbs. Serve with warm pita wedges.

Ingredients

  • 1 (6-oz.) package feta cheese in brine, drained and crumbled (1 1/2 cups)
  • 1/2 cup reduced-fat cream cheese, softened
  • 1 large clove garlic
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons pomegranate seeds (arils)
  • 1/2 cup lightly salted pistachios, chopped
  • 1 teaspoon fresh thyme leaves
  • 2 (6 1/2-inch) whole-wheat pita rounds, warmed and cut into 16 wedges

Preparation

  • Add the creamy feta cheese, garlic, and oil to a food processor; process until mostly smooth, about 2 minutes.

  • Transfer to a small bowl. Top with pomegranate seeds and pistachios, drizzle with honey. Sprinkle with thyme. Serve with warm pita wedges.

To make ahead

Refrigerate the dip (Step 1) in an airtight container for up to 3 days. When ready to serve, let the dip come to room temperature. Proceed with Step 2.
