Paleo Cauliflower Rice Pasta
A grain-free, Paleo-friendly pasta alternative that uses cauliflower rice as the base. Light, nutritious, and surprisingly satisfying.
Prep time: 10 minutes | Cook time: 5-10 minutes | Serves: 2
Ingredients
- 3 c. cauliflower rice (fresh or frozen)
- 2 T. extra virgin olive oil
- 3 cloves garlic, minced
- 1 c. cherry tomatoes, halved
- ¼ c. fresh basil leaves
- 2 T. pine nuts or walnuts, toasted
- Sea salt and black pepper, to taste
- Zest of 1 lemon
Preparation

Heat oil: Heat olive oil in a large skillet over medium-high heat.

Cook cauliflower: Add cauliflower rice and sauté for 3-4 minutes, stirring frequently.

Add garlic: Add minced garlic and cook for 1 minute until fragrant.

Add tomatoes: Add cherry tomatoes and cook for 2-3 minutes until they begin to blister.

Finish: Remove from heat. Stir in fresh basil, nuts, and lemon zest. Season with salt and pepper.

Serve: Divide between plates and serve immediately.
