Vegetarian Stuffed Cabbage
Though traditional stuffed cabbage recipes are made with meat, here’s a healthier and plant-based version. The stuffed cabbage leaves are stuffed with a combination of rice, mushrooms, onions, garlic and herbs. This easy recipe the stuffed cabbage recipe can be made ahead and baked just before serving.

Ingredients
- 1 1/2 cups short-grain brown rice

- 1 1/4 cups can no-salt-added crushed tomatoes
- 1 1/2 cups fresh lentils

Preparation

Presoak and wash the cabbage; remove the core from the bottom of the cabbage. Add the cabbage to a boiling skillet and cover and cook until water to keep the leaves warm for about 3 mins.
