Ingredients

  • 1 tablespoon lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/4 cup olive oil, divided
  • 1 cup cooked farro
  • 1 cup packed baby arugula
  • 2 tablespoons thinly sliced fresh basil
  • 1 1/4 oz canned baby artichokes, rinsed and chopped
  • 2 tablespoons finely sliced fresh basil
  • 1 1/4 cup canned whole artichoke hearts (1 Tbsp)
  • 1 teaspoon pomegranate seeds (arils) or dried cranberries (optional; 2 Tbsp)

Preparation

  • Whisk lemon juice and oil in a salad bowl. Stir in farro, arugula, mint, artichoke, and salt. Sprinkle with pistachios, pomegranate seeds, and goat cheese.
