Easy Oven-Roasted Asparagus

A simple yet elegant vegetable side that lets fresh asparagus shine. Roasted with olive oil, garlic, and sea salt until tender and slightly crispy at the edges.

Prep time: 10 minutes | Cook time: 15-20 minutes | Serves: 4

Ingredients

  • 2 lbs. fresh asparagus spears, trimmed
  • 3 T. extra virgin olive oil
  • 4 cloves garlic, minced
  • Sea salt and black pepper, to taste
  • Zest of 1 lemon (optional)
  • 2 T. Parmesan cheese, grated (optional)

Preparation

  1. Prepare asparagus: Trim woody ends from asparagus and rinse. Pat dry with paper towels.

  2. Toss: Place asparagus on a large rimmed baking sheet. Drizzle with olive oil, add minced garlic, and season with salt and pepper. Toss to coat evenly.

  3. Roast: Spread in a single layer and roast at 400°F for 15-20 minutes, stirring halfway through, until tender and slightly crispy at the edges.

  4. Finish: Remove from oven, add lemon zest if desired, and sprinkle with Parmesan cheese if using.

  5. Serve: Serve immediately as a side dish.
