Loaded Cauliflower Au Gratin
A decadent cauliflower dish smothered in a creamy, cheesy sauce and baked until golden. The perfect loaded vegetable side dish.

Ingredients
- 1 large head cauliflower, cut into florets
- 3 T. unsalted butter
- 3 T. all-purpose flour
- 2 c. whole milk
- 2 c. sharp cheddar cheese, shredded
- ½ t. Dijon mustard
- Sea salt and black pepper, to taste
- 4 slices bacon, cooked and crumbled
- 2 T. Parmesan cheese, grated
- 1 T. fresh parsley, chopped
Preparation

Blanch cauliflower: Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 5 minutes until just tender. Drain and set aside.

Make sauce: Melt butter in a saucepan over medium heat. Whisk in flour to form a roux and cook for 1-2 minutes, stirring constantly.

Add milk: Gradually add milk while whisking continuously to avoid lumps. Continue cooking until sauce thickens, approximately 5-7 minutes.

Add cheese: Remove from heat and stir in cheddar cheese and Dijon mustard. Season with salt and pepper.

Assemble: Combine cauliflower and cheese sauce in a baking dish. Top with crumbled bacon, Parmesan cheese, and parsley.

Bake: Bake at 375°F for 15-20 minutes until golden and bubbly.

Serve: Remove from oven and serve immediately.
