Scandinavian Pickled Herring Bites

This Scandinavian-style appetizer is a good way to add pickled herring if you’ve never had it before. It is the potent flavor of the herring is balanced by a dollop of sour cream and a garnish of dill on a potato chip.

Ingredients

  • 6 new or baby red potatoes (about 12 ounces)
  • 1/2 teaspoon salt
  • 1 8-ounce container pickled herring fillets (see Note), drained
  • 3 tablespoons reduced-fat sour cream
  • 1 tablespoon chopped fresh dill
  • Freshly ground pepper to taste

Preparation

  • Place a steamer basket in a large saucepan, add 1 inch of water and bring to a boil. Put potatoes in the basket and steam until barely tender when pierced with a skewer. 15 to 20 minutes. Let potatoes, refrigerate for up to 4 hours.

  • Cut herring fillets into pieces small enough to fit on a potato slice. Place one piece of herring on a potato slice. Place one piece of herring on a potato slice with a fork and sprinkle with sour cream and sprinkle with dill and a grinding of pepper.

Tips

  • Make Ahead Tip: Refrigerate for up to 4 hours.

  • Note: Pickled herring are herring that have been cured in salt, rinsed and then picked in a vinegar-based marinade that may flavor with spices such as peppercorn, juniper or caraway. For best flavor, work with the fish in the freezer or frozen department of your seafood.
