Daikon Delight
Tender fermented daikon radish that develops a subtle sweetness and complex flavor profile during fermentation. This versatile side dish pairs well with many meals.

Ingredients
- 2 pounds daikon radish
- 4 garlic cloves, sliced
- 1 tablespoon yellow mustard seeds
- 1 tablespoon coriander seeds
- 1 teaspoon turmeric powder
- ¼ cup unrefined sea salt
- 4 cups filtered water
Preparation

Prepare brine: Dissolve salt in filtered water.

Prepare radish: Peel and cut daikon into spears or chunks.

Layer the jar: Add garlic, mustard seeds, coriander seeds, and turmeric to the bottom of the jar.

Pack radish: Arrange daikon pieces in the jar.

Cover: Pour brine over daikon until completely submerged. Weight down.

Ferment: Ferment for 5–10 days at room temperature (65°F–75°F / 18°C–24°C).

Refrigerate: Store in the refrigerator when fermentation is complete.
Storage
Refrigerate for up to 3 months.
