For the next time, you’re craving a burrito but aren’t feeling a bunch of ground beef or any meat for that matter, or maybe you don’t want the heavy flour tortilla…
Raw “Burrito” Spring Rolls!
These yummy spring rolls make for an amazingly light, yet filling and nutritious meal.
The star of this meal is the walnut and pecan “nut meat”. You might be nervous to try something like this but it tastes just like ground taco meat! Just be sure to add the right spices, like cumin especially, and you will be impressed with the outcome.
Feel free to add other kinds of burrito fixings you’re into! Let your intuition lead you.
Raw Burrito Spring Rolls
- 1 cup walnuts
- 1/2 cup pecans
- 1/2 small onion – diced
- 1 cloves garlic
- 2 tsp cumin
- 1/2-1 tsp salt (depending on your tastes)
- 1/2 tsp pepper
- Teeny splash of liquid aminos
- A small squeeze of lime
- 1/2-1 tsp of your favorite hot sauce
Combine all your ingredients in a food processor, or combine with a mortar and pestle.
I used the latter option here.
Be mindful of not letting the ingredients get too smooth from blending. We want there to still be some texture and some crunch at the end. The small amounts of liquid at the bottom of the recipe help hold it together a bit without being too crumbly. Try not to add too much liquid though, as it may make rolling the spring rolls difficult.
Feel free to add whatever other seasonings your heart desires.
The next step is to build your spring roll!
I chose to fill mine with
- Nut meat
- Carrot kraut
- Hot sauce
And man, did they come out delicious!
Spring rolls can be tricky if you are not patient, but they are well worth it. Trust me!
My friend let me use these blue rolling trays, which made it much easier. If you happen to have these or come across them at a thrift store or garage sale, they are a game-changer!
